My blond moment #245

So one of my lovely coworkers, Mrs. Deb, was mentioning that her dryer wasn’t working right. I, while listening to her was also concentrating on something else, and so my response? “Oh your hair dryer?”

She laughed so hard and responded sweetly with, “No, my clothes dryer. It just needs a new heating element. You just crack me up, LeeLee.” (that’s my nickname for Mrs. Deb.) Those 4 words are words, I’ll never live down, but that’s ok, because I totally made Mrs. Deb’s day. ๐Ÿ™‚

February’s End of the Month Summary

How is it the end of another month? I’m just flabbergasted! Time goes by so quickly when you look back. Anyway, here’s my post about February!
This month I was happy about: getting a free meal for Valentine’s Day.

This month I was sad about: my sis-in-law moving and the situation with Mr. Penny.

Somethings I accomplished this month are: finishing editing the wedding that I photographed in January!

Something new I did was: keep my niece for 3 days.

Books I read were: The Help, but I actually had to give up on it. I’ll try it again later.

What I remember about work was: the typical shenanigans of working with college students, which I love. One night I was working with Daniel* who was looking at one of the reserve items from the shelf. There were some decently disgusting pictures in this book. He proceeded to show them to me. Then, forced another student to look at them. Mark* thought it was disgusting and just kept talking about it. Well they both did. I was trying to forget about it, which perusing facebook. I’m was glancing over Mark’s facebook page and noticed it said he was interesting in men. Well, this disgusting picture we had been subjected to was having to do with men. It was just a weird set of circumstances. I proceeded to ask Daniel if Mark was Interested in Men or if his site had been hacked. And we were like…no….no way. A few days later, Mark came to “Clear things up!” I was so embarrassed, saying that one of his frat brothers had changed it. Never a dull moment supervising College students!

A lesson I learned this month was: expect the unexpected!

A friend and I: enjoyed hanging out on the cub scout family trip to the McWane Center. Things were so crazy I didn’t have a chance to have lunch this month. ๐Ÿ™

The boys were: busy as usual. Alex has been finishing up his requirements for Wolf (Cub Scouts). Drew has had several band practices after school and soccer is back in full swing.

My husband was: busy and stressed. Nothing out of the ordinary there!

The thing I’ll remember most from this month was: the trip the McWane Center.

Cub Scout Trip 2012::McWane Center {Birmingham}

So I mentioned in a couple of my picture posts that the cub scouts had a family trip this past weekend to the McWane Center. Such a fun place! Nearly all hands-on, very informational, just loved the place! If you ever travel to Birmingham, I recommend it. Anyway, so our family decided to get their early, so we’d have plenty of time to see all 4 floors. We were able to get through all the floors in about 5 hours and that was really allowing the boys time to stay at some of the exhibits for awhile, not just skimming over everything. We met as a Pack at 6pm, which is when the museum closes. We were able to bring our stuff in. We headed to the IMAX theater, where we saw a movie called Rescue. Then, it was off to the cafe for dinner. The boys had about an hour to site-see in the museum and then they all got to earn a belt loop. After that many of us got our sleeping bags out and got ready for bed. Although, lights out wasn’t until midnight. Needless to say after being there since 10 am, I was one of the first ones asleep. The fact we slept under the large-fanged Appalachiosaurus didn’t bother me at all!

Biscotti…Wanna-Be!

I did this recipe quite awhile ago and just never got around to posting it…

My biscotti didn’t have the nice crunch that I thought it was supposed to have. Turns out I left off step 7, so that’s why I called it Wanna-Be! I’m going to try out a different kind soon, so we’ll see how it turns out next time.

Servings: 24 pieces
Prep Time: 5 minutes
Cooking Time: 45 minutes

Biscotti Wanna-Be

Ingredients:
1 1/4 c. all-purpose flour
1/2 c. white sugar, granulated
1 tsp. baking soda
1/4 tsp. salt
3 large eggs
3/4 cup pecans, roughly chopped
2 tbsp. lemon zest
6 oz. semisweet chocolate

Directions:
1. Preheat oven to 350ยฐ.
2. Sift flower, baking soda, sugar, and salt into a large bowl. Mix in eggs. I just used a fork to mix it all in.
3. Zest and pecans can now be mixed in gently.
4. Pour mixture on to wax paper on a cookie sheet.
5. Cook for 25 minutes.
6. Allow dough to cool and cut into long slices about an inch thick.
7. Layout biscotti on wax paper and bake for 20 more minutes, flip half way through.
8. Melt chocolate in a double boiler.
9. When the biscotti is done baking, let it cool.
10. Dip them into the chocolate and allow chocolate to harden.
