Lately

New Polaroid 32' HD TV

Well, this week I’ve got some more stuff accomplished from my earlier list. We also shopped for a new TV and ended up getting a 32′ Polaroid HD TV. It’s really awesome. I’m also really excited that I finally took my rings to be resized. Just as I increased a shoe size when pregnant with Monkey Boy, I also increased in finger size and never went back. So I took my wedding ring and a ring that was my great grandmother’s. I’ve never worn her ring, because it’s always been to small. It’s also so worn down on the underside. It’s beautiful and can’t wait to wear it. As for my graduation ring, I’m going to send it off because Balfour will do it for free. So I’ll get them back on Wednesday! Yay!!

We’ve also been watching some movies:
The Sisterhood of the Traveling Pants – cute chic-flick
Dinosaur Hunter – a movie my 8 yo recorded and we both really liked it. A good family movie.
iRobot – didn’t care for this one, not really my type of movie, lots of violence
Fever Pitch – great movie! A must see chic-flick

Ice Cream Sandwich Dessert

Servings: 12 to 15

Ingredients
19 ice cream sandwiches
1 (12 oz.) container frozen whipped topping, thawed
1 (11 3/4 oz.) jar hot fudge ice cream topping
1 C. salted peanut

Directions
1. Cut one ice cream sandwich in half. Place one whole and one half sandwich along a short side of an ungreased 13×9″ pan. Arrange eight sandwiches in opposite direction in the pan.

2. Spread with half of the whipped topping. Spoon fudge topping by teaspoonsful onto whipped topping. Sprinkle with 1/2 cup peanuts. Repeat layers with remaining ice cream sandwiches, whipped topping and peanuts (pan will be full).

3. Cover and freeze for up to 2 months.

NOTE: Remove from the freezer 20 minutes before serving. Cut into squares.

Mexican Stuffed Shells

Servings: 6
Prep Time: 25 min.
Cooking Time: 25 min.

Ingredients
24 uncooked jumbo pasta shells
1 lb. lean ground beef
1 large can of enchilada sauce
2 tbs. taco seasoning
1 cup of finely chopped onion
1 can (8 oz.) fire-roasted diced tomatoes
1 cup frozen corn
1/2 cup canned black beans, rinsed and drained
1 cup shredded reduced-fat Mexican cheese blend or cheddar cheese

TOPPINGS:
8 tablespoons reduced-fat sour cream
8 tablespoons salsa
1/4 cup sliced ripe olives
1/4 cup sliced green onions

Directions
1. Preheat oven to 350 degrees.
2. Cook pasta shells according to package directions; drain.
3. In a nonstick skillet, cook beef and onion over medium heat until no longer pink; drain.
4. Add in fire-roasted tomatoes with liquid and taco seasoning. Stir and ensure seasoning is well distributed.
5. Stir in the fire-roasted tomatoes, corn, and beans.
6. Stir and spoon into pasta shells.
7. Place in a baking dish coated with nonstick cooking spray.
8. Pour enchilada sauce over the shells and sprinkle with cheese.
9. Bake at 350° for 25-30 minutes or until heated through.
Serve with sour cream, salsa, olives, and green onions.

Oreo Balls

Christmas Food

Makes: 25

Ingredients:
1 package Oreo cookies, crushed
8 ounces cream cheese, softened
1 package white almond bark
1 package chocolate almond bark

Directions:
Using a blender or hand held mixer, mix Oreos and cream cheese together. Roll into walnut size balls. Chill for an hour. Melt approximately 3/4 package of both types of almond bark. Stick a toothpick in an Oreo ball and dip it in the melted almond bark. Allow to harden on wax paper. Takes about 15 min. When Oreo balls are no longer sticky to the touch, decorate with drizzles of the other type of almond bark.

Chimichangas

This is a recipe for one of my favorite Mexican dishes, Chimichangas. My kids love this recipe.

Makes: 4-8 servings
Prep Time: 35 min
Cook Time: 15-20 min


Chimichangas by Magnolia Mom

Ingredients
1 lb. ground beef
1/2 cup finely chopped onions
2 cloves minced garlic
1 tsp. dried oregano leaves
1/2 cup chili powder
8 flour tortillas
6 oz. Velveeta cheese
2 cups vegetable oil
1/4 cup sour cream
1/4 cup finely chopped fresh cilantro

Chimichangas - 4

Directions
1. In large skillet on medium heat brown meat with onions, garlic, oregano, and chili powder. Cook until onions are tender, stirring occasionally. Put the skillet back on the burner and put temp on low. Add in chunks of velveeta. Stir and allow to melt. Make sure the cheese and meat our evenly spread.
2. Put meat mixture in the center of each tortilla. Fold in all sides of tortillas to completely enclose filling. Place on a pan. Refrigerate for 20 minutes.
3. Heat about an inch and half of oil in large saucepan on medium-low heat. Add in the chimichangas. Cook about 2-3 minutes on each side.

Service with salsa and sour cream.

Berry Lemonade Slush

Makes: 4 servings, 3/4 cup each
Prep Time: 5 min
Total Time: 5 min

Ingredients
Country Time Lemonade Flavor Drink Mix (dry)
1/2 cup water
3 cups ice cubes
1 cup fresh or frozen strawberries

Directions
Measure drink mix into cap to 1 qt. line (1/2 cup). Empty into blender container.
Add remaining ingredients; cover. Blend on high speed 10 sec. Turn off blender. Stir with spoon; cover. Blend an additional 5 sec. or until smooth, using pulsing action.
Serve immediately. Store leftover slush in freezer.
