I was grocery shopping and found Hershey’s New York Cheesecake Kisses. I always jump at a chance to try new kisses. 😉 I love cheesecake so I was really excited about trying them. After a couple, I decided they’re pretty good. A little dry. I guess Hershey’s can’t top these! I just love the cherry kisses.

Soccer Tourney 2008::Atlanta, GA

Last night we came up to my in-laws near Atlanta. We visited with them and had dinner. We spent the night and got up this morning and drove to Tucker, Ga for the Triumph Cup Tournament. TV Boy had a rough day and it was pretty cold. After the game this evening we went to Northlake Mall for a quick snack and then back to the hotel. We had delivery from Golden Sun and watched football. One game tomorrow before lunch and we’re headed home.

I need to get busy editing from the last photo session I did and get that posted by Thanksgiving. I also have a lot of updating to the website, but I’m waiting on the hubby to make some changes first. You can see the latest here. I’ll try not to bore u with all the details of my business here. 🙂 I will try to take some pictures. Today was just too cold to deal the camera.

Life

So yah, I haven’t been on here regularly….really in over a year. Life has had its major ups and down the last year and half. I’ve always believed that God only gives you what you can handle but sometimes I wonder! I’m not going to rehash everything, but I’m sure as I start writing more, more will come out. It’s not that I’m wanting to hide anything, just don’t want to bore you with details.

What I will say is that in May I was laid off right before getting out for summer. Alabama has a serious problem with their funding in education and so it seems that every few years they have major layoffs of non-tenured teachers. It wasn’t a real shocker and really God was looking out for me. I had only been in that system that one year and it was THE worst year of my life career-wise. Getting beat up and cussed at is not rewarding and makes you wonder how anyone would ever want to teach school. I know I came steps away from walking out many days.

So I spent the summer looking for a job, not just teaching, but at the university and other jobs. I wasn’t closing the door to any option, really. I still spend several hours a week looking and calling. I can’t afford to just be a WAHM/SAHM, which is really a bummer. In the mean time I’ve started my own business. Very exciting, but LOTS of work. Most of it is work I love. Photography has become a true passion of mine, so it’s very rewarding to share my talent with others. I’ll admit that I have so much to learn and need so much more equipment, but I’m doing the best I can with what I have. So if you’re in my area and need a photographer for events, portraits, or sporting events, please let me know! I’m not doing weddings yet, but will do engagement photos. Those aren’t near as stressful! 🙂

Anyway, I didn’t want to just put a post with my menu for next week (haha), so I decided to actually try to write something with some substance. I’m sure all my readers have abandoned me, which is totally understandable. If there is anyone out there still reading or if you’re new here, please drop me a comment. Thanks

Chicken Tortilla Soup

Chicken Tortilla Soup

Servings: 16
Prep Time: 10 Minutes
Total Time: 5 hr 40 min

Ingredients
2 boneless, skinless chicken breasts, shredded
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp oregano
2 cups of onion, finely chopped
1 cup of celery, finely chopped
2 cups of carrots, diced
1-2 jalapeno peppers, seeded and chopped
2 tbsp of garlic
2 1/2 quarts of chicken stock
2 28 oz cans of crushed tomatoes
1 tsp of cumin
1 tsp ground coriander seed
Sea salt and fresh cracked pepper to taste
1/2 a cup of fresh cilantro, chopped
6 fresh white corn tortillas cut in strips
Mexican style cheese shredded

Directions
1. Combine all ingredients except cheese and tortillas into crockpot.
2. Cook for about 4 hours.
3. Ladle into bowl and add tortillas and cheese.

Rob is tired of Hamburger Helper 🙂 Time to get back into making my weekly menus and planning ahead. Takes out much of the hassell of figuring out what to cook each night and wondering what you have in the fridge/pantry. This is a bit earlier than I post it, as I use to do it on Mondays, but wanted to go ahead.

Monday – Chicken in bacon, corn on the cob, and roasted potatoes

Dinner – Chicken Tortilla Soup

Breakfast – Pigs in a blanket

Dinner – Orange Pork with rice

Toasted Pumpkin Seeds

Toasted Pumpkin Seeds


Prep Time: 10 minutes
Cook Time: 1 hour

Ingredients:
Pumpkin seeds
Cooking spray, olive oil, or butter
Optional: Salt, garlic powder, onion powder, seasoned salt, or other seasoning of choice

Directions:
Preheat oven to 250 F. Line a baking sheet with non-stick foil.
Rinse pumpkin seeds. Remove all the pulp. Drain pumpkin seeds and discard pulp.
Toss pumpkin seeds in olive oil, butter, or spray with cooking spray.
Sprinkle with salt, garlic powder, onion powder, seasoned salt, cayenne pepper, or your choice of seasonings. Toss to coat.
Bake about 1 hour, tossing every 15 to 20 minutes, until golden brown.
Cool pumpkin seeds before eating. Store in an airtight container at room temperature up to 3 months or refrigerate up to 1 year.
