Cajun Chicken Pasta

Cajun Chicken Pasta

Servings: 4
Prep Time: 5 minutes
Cooking Time: 20 minutes

Ingredients:
1 1/2 lbs. boneless skinless chicken breast halves cut into bite size pieces
4 tsp. Cajun seasoning (I used Slap Ya Momma)
4 tbs. Olive Oil
2 cups heavy cream (more if needed)
1/2 tsp. dried basil
1/2 tsp. lemon pepper seasoning
1/2 tsp. salt
1/4 tsp. freshly-ground black pepper
1/4 tsp. garlic powder
1 box Penne pasta
Grated Parmesan cheese

Directions:
1. Cook pasta as directed.
2. While the pasta is cooking, place chicken and Cajun seasoning in a bowl and coat evenly.
2. In a large skillet over medium heat, saute chicken in olive oil until almost tender, about 5 to 7 minutes.
3. Reduce heat.
4. Add cream and seasoning; heat through.
5. Add pasta and toss; heat through.
6. Sprinkle Parmesan cheese

Update…{well not so much}

I just can’t seem to get in a groove of blogging. Well…if I think about it, I really can’t get into a groove of anything! If that makes any sense! Anyway, today I’m gearing up for NINE 10 and 11 year old boys to come over and celebrate with Drew. We did it last year and it wasn’t too bad except for the noise of the air hockey table at 4 am! 🙂 I had planned on a full update, but time is ticking and he will be home with one party goer that is walking home with him….lateh!

E L E V E N {how can that be?}

Today TV Boy is ELEVEN. I had to type that out to help it sink in. I just can’t believe it’s been that long. With this age comes a lot of change. He’ll transition into middle school in August for 6th grade. He’ll move up to boy scouts in May. In fact, he’s not able to have his birthday party tonight because he’s at a camping trip with the boy scout troop he plans to join. So we’ll have a house full of boys next Friday night.

Thinking back to this last year in the life of TV Boy, he’s really made me so proud. Last year on the weekend of his birthday, we got the call from Coach Mike asking if he would like to join the Auburn Thunder team. This was such an honor. He’s learned a lot about life through this experience. Lots of ups and downs, but I don’t think he’d go go back to rec league (but you never know!)

In June, after playing a half a year on the U10 team with Coach Mike, he endured a week of tryouts. We went and observed. I loved seeing the determination his eyes and the confidence in his moves. Yet listen to him after each day of workouts and the humble tone of voice he spoke with saying he wasn’t sure if he’d make it or not. He was quite happy and relieved to get the letter saying he was on the team!

Among being on a travel soccer team, he’s succeeding in a departmentalized classroom setting. Staying organized while changing classes has not been to much of a problem for him. I’ll have to admit I was a bit nervous about his success in that type of classroom, but I’m so glad that they did that to help him prepare for middle school.

So this year instead of posting pictures from his last 11 years, I’ll post pics from his 11th year!

Thinking back…

Well I had written Drew’s birthday entry a couple days ago and you’ll see it in a few hours, but since I’m up and I was reading about Harper and Brayden and I couldn’t help but think back to this time 11 years ago. Wow! I get tears in my eyes thinking about it. No not because of the thoughts of the pain, but just thinking about how awesome it all was. After he was born, I remember the feelings that I had. It was crazy how I felt just an overwhelming love for him like I never thought I could. Yet, it was instantaneous! I woke up at about 2 am and felt what I thought were contractions, but since it was my first baby I wasn’t totally sure. I got up to go the bathroom, which is nothing out of the ordinary being that I was in my 3rd trimester. Not that I could ever get comfortable enough to sleep for too long and when I did an hour later I’d wake up to go to the bathroom. Oh the joys of pregnancy! Truthfully, I LOVED being pregnant both times! Here’s where Rob took down my contractions. Love it! Didn’t love the contractions, but you get it! You can see in the upper right hand corner it says 2:30-4:15. That’s the amount of time I laid in bed and wondered if I was really in labor and how long to wait before waking Rob up.

I won’t rehash the entire 14 some odd hours of labor and if this post doesn’t make any sense just give me some slack it is 2 AM. Happy Birthday to my 1st baby!

Pets in the White House

Yesterday a good part of the day was spent doing web work on my business site with Rob while watching Animal Planet. I think it was a Dogs 101 marathon. One of the shows that was on was about presidential dogs, which I found to be very interesting.

It was probably inspired by the fact that the Obama girls are getting a puppy soon. The show talked about what type of dog would be suitable for them. One of the commentators on the show was from the Presidential Pet Museum, which totally intrigued me and I SO wanna go. Staff there recommends a Portuguese Water Dog, because it’s non-allergenic, doesn’t shed, and is intelligent among other reasons. One of the main concerns of the Obama’s is that one of their daughters is allergic to dog fur. It’s amazing when I googled for information how many people have written articles about their dog selection!
