Prayers Needed

Do you ever get news…bad news and it’s so shocking that it gives you goosebumps? That happened today. I was on facebook, doing my normal perusing when I saw a wall post about Ty Garner. Ty was one of my physical therapists when I was going to Total Rehab for my neck. We’ve also gotten to know Ty’s brother and nephew, who plays travel soccer with TV Boy. All such great people. Although I don’t know Ty well, I know he is a sweet, sweet soul. Anyway, Ty was cycling early this morning. He was struck by a truck. I’m not going to speculate or spread rumors about the driver, because that’s all they are right now are rumors. Ty suffered serious head trauma and really needs our prayers. Fried Pickles

Fried Pickles

Servings: 4
Prep Time: 20 minutes
Cooking Time: 15 minutes

Ingredients:
1 egg, beaten
1 cup milk
1 tbsp. flour
1 tbsp. Tabasco

3/4 tsp. salt
3/4 tsp. pepper
1 1/2 cup flour
1 1/2 cup cornmeal
1 jar of sliced dill pickles
Oil for deep frying

Directions:
1. Stir first 4 ingredients together. Put to the side.
2. Combine flour, salt and pepper, and cornmeal in a bowl.
3. Dip pickles in milk mixture and dredge in flour mixture, repeat process.
4. Cook in hot oil at 350 degrees. You know your pickles are done when they are golden brown and they float to surface. Drain on paper towels.

Cooking Time: 20 minutes

Ingredients:
4 boneless, skinless chicken breasts
2 tbsp of garlic powder
1/2 cup of soy sauce
olive oil
pepper

Directions:
1. Preheat oven to about 375 degrees.
2. Butterfly your chicken breasts and then place into plastic ziplock bag. Beat chicken until it’s about an inch thick.
3. Drizzle chicken with olive oil. Spread garlic and pepper over chicken.
4. Place on broiler pan. Cut a few small slits into chicken. Pour soy sauce over chicken making sure to fill slits.
5. Cook chicken for about 20 minutes.

Ramblings of My Life

You know, I haven’t actually written here in a while. Yah, I’ve posted stuff; menus, pictures, other random superficial posts. I haven’t talked about what’s been going on with me. I’m not sure you wanna hear it, but at this point, I have to remember this blog was started for me and for my family who are far away.

I’ve spent the last few weeks, well really all summer, but especially the last few weeks, trying to find a teaching job. With no luck! I’ve only had 4 or 5 interviews. Teaching jobs in this is state are very hard to find since we don’t know how to properly fund education. I think I’ve discussed that before, so I won’t dwell on that. Anyway, it looks like I’m going to be substitute teaching and hopefully getting enough work to meet what I’ve been getting in unemployment, which runs out very soon. It’s all so very scary. I just keep thinking that God has a plan for me. But truth be known, I really wish I knew what that plan was, because it’s driving me nuts. I really hate the unknown. Regardless, I’ve had many long talks with Him as of late. So we will see. I know I’ve got people praying for me and that’s a good thing to know that people love me enough to do that. I also have to remind myself that life could be much worse. When you get all wrapped up in your own problems its often easy to forget about what’s going on around you and the fact that there are people much worse off than me. I really should be counting my blessings. It might even be good for me to write down what things I am thankful for. Sometimes seeing something on paper (or in this case typed on the screen) is therapeutic.

So I guess what you (if anyone is still reading) can take from this is that nothing much has changed. I still need a job, so if you know of a teaching job, I would love you forever if you could give me a shout out. Heck at this point, I’ll take an office job. Since Alex is going to be in school now, I don’t have to worry about childcare for him. That opens up a lot more opportunities, since we won’t have to worry about that $500 a month!

As usual I could ramble on and on, but I’d probably just be saying the same thing over and over, so I’ll shut up for now.

Banana-Chocolate-Peanut Butter Crackers {yummy snack}

Yummy Quick Snack

I have been craving chocolate and bananas lately. I was trying to come up with something quick and easy to quench my craving. This is what I came up with. Luv it and so do the kids!

Servings:
Prep Time: 5 minutes
Cooking Time: 0 minutes

Ingredients:
Graham crackers
Peanut butter
Chocolate chips
Banana

Directions:
Spread peanut butter over each graham cracker.
Slice banana into thin slices and place on each cracker.
Sprinkle peanut butter with chocolate chips so they stick.
