Before Thanksgiving I was thinking about desserts for Turkey day. I thought about the fact I love Pecan Pie and Rob loves Apple Pie, so why not put them together? I hunted around and found this recipe. They called them “bars.” To me a bar is like a cookie, you should be able to pick it up and eat it. This was not like that. Quite ooey, gooey, fall apart messy, but very yummy!
Servings: 10-12 pieces depending on how small you cut them
Prep Time: 30 minutes
Cooking Time: 2 hours and 30 minutes
Ingredients:
Apple Layer
2 cups all-purpose flour
3/4 cup packed brown sugar
1 tsp ground cinnamon
1/2 tsp baking soda
3/4 cup butter
2 cups peeled apples, chopped (I recommend Granny Smith or Gala)
1 beaten egg
Topping
3/4 cup packed brown sugar
1/2 cup finely chopped pecans
2 tablespoons butter
2 tablespoons honey
2 tablespoons milk
Directions:
1. Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
2. Mix flour, brown sugar, cinnamon, and baking soda in a large mixing bowl. Chop butter into small chunks and drop in as you mix with a mixer.
3. Add in apples and egg and stir gently.
4. Press mixture firmly in pan. Bake 25 minutes or lightly brown. Middle will puff up.
5. In a saucepan, combine all topping ingredients. On medium heat, stirring constantly until it boils. Let it boil for 1 minute, stirring continuously. Remove from heat.
6. Remove apple layer from oven. Spread hot topping over apple layer. Put it back in the oven. Bake about 5 minutes.
7. Let it cool for about an hour and half. Cut into pieces and serve with whipped topping.
